A Hot Food Display Unit Is a Necessity for Any Type of Catering Busines
Hot food display counter, cabinets, or units are an essential component for all enterprises that deal with foodstuffs. There are several reasons, the most important being the health aspect, practicality, functionality, and the overall aesthetics. The units are mainly used by outlets that serve fast foods, company cafeterias, hospitals, hotels, and schools.
You will also see them, in all shapes and sizes, at sports events, festivals, fairs, clubs, restaurants, fetes, markets, and any kiosk that is offering heated snacks or meals. Any foodstuff that has been cooked must be kept warm so that it does not lose the appetizing factor and, more importantly, to prevent it from going bad. Most cases of food-poisoning occur outside the home environment when people are at a public venue.
Just one case of food-poisoning can ruin a business. All perishable foods contain bacteria, some of which can cause illness if allowed to grow in the right conditions. They are able to multiply at a rapid rate and become very dangerous. Bacteria increase in numbers, not size. If circumstances are right, one bacterium can become more than 2 million in just a few hours. This situation can often occur if hot foodstuffs are reheated and consumed.
Not only will the business lose sales, but it will certainly lose customers. It therefore makes sense to invest in a unit where this cannot happen. In this article, we will discuss some display units for hot foods. The first thing to consider before buying is the size. It’s no good having a unit that is too big because this is not only impractical, but it conveys the message that your selection is limited.
A unit that is too small is also wrong. It will not consume unnecessary energy but give the impression that you are not making many sales. The right size should be able to cope with a balanced volume of foodstuffs while giving the public the impression that you have a good range of tasty fare. A few empty slots in the unit have a good psychological effect because it creates the illusion that your offerings are selling well.
When looking at the various designs and shapes, ensure that the contents can be seen from all angles. This is especially important if you want to attract passing trade. To lure customers, the cabinet or unit should have attractive signage indicating prices and any special offers. The latest trend in the food industry is effective lighting, especially when items are on display.
Ambient lighting creates illumination that appears as though it is coming from all directions and that there is no visible source. It is the opposite of directional lighting where the source is visible. When installed in food display units, ambient lighting has two significant benefits. The first is that it enhances the appearance of the contents. The second is just as important in that it can actually increase the longevity of the heated foodstuffs.
From the aesthetic viewpoint, traditional fluorescent lights can make cooked food look very unappetizing. It loses color because it pales, making it appear old and stale. Correct lighting makes a huge difference. When the contents are showcased under ambient lights, they look vibrant, colorful and appetizing.
Apart from making products look unappealing, conventional lights give off high levels of IR and UV radiation, especially in the UV-B and UV-A range. These rays increase the surface temperature of hot foods, resulting in accelerated discoloring and spoilage. They also cause odor and decrease freshness levels. It is essential not to allow this type of exposure to any foodstuffs that are perishable.
The ambient technique is widely used in restaurants, coffee shops, and bakeries that display highly perishable items. Other industries have followed suit as well, for example many florists use ambient lights to keep flowers fresher. Other sectors include cosmetics, medical facilities, and even museums.
When choosing a unit, it must be able to keep the contents warm and fresh until served. The temperature control should be adjustable so that you can determine the correct serving heat. Most units have tempered glass doors on the operator’s side. These can be easily opened and closed. The most preferable type of outer casing is stainless steel. This, combined with tempered glass, will ensure that the unit is attractive, efficient, and will last for years with very little maintenance.
A typical small unit is called a ‘pass through food warmer’. These are ideal for pies and pastries. Common features include a 50-pie capacity, four racks (493 mm x 295 mm), temperature display, thermostat control, handles that stay cool, and easy-to-clean removable glass doors with an anti-pilfer locking device.
A floor-standing unit would typically have built-in ambient lighting on all shelves, a safety cut-off switch, electronic display and temperature control, a ventilation system, and adjustable shelves that are fitted with lockable wheels for stability. These are ideal for toasted sandwiches, hamburgers, pies, pizzas, focaccia breads, and pastries. Electrical requirements are usually single phase 220-240V, but will obviously vary from country to country.
A larger unit with all-round visibility to increase the sales potential is ideal for busy establishments as well as self-service eateries. Some look really great with sleek designs offset by chrome-plated rods on the shelves. Then there are more expansive ones designed to handle buffet-type requirements. Many of these have a raised one-touch canopy and drop-in holders for pots.
Most of these high-quality units are made with stainless steel and come in a variety of styles and sizes. Everything is pre-installed for quick access. They are designed for GN pans with a depth of up to 150 mm and have easy-to-use digital temperature controls. When required for heated contents, many versions include Bain Maries and dry wells.
Finally, there are hot food display units which are used to cater for large groups of people, e. G. Office canteens, schools, hospitals, and hotels. These usually have two rows of shelves, two food bays, and numerous holders for GN pans. A unit of this size would also have toughened safety glass, an overhead quartz lamp for optimal light and heat, in-tank temperature probes, and a thermostat control with a range of 30 to 120 degrees Celsius. Whatever your requirements are, the unit should look good without detracting from the contents in it.
